Easy Beef Goulash
Ingredients
2 tbsp. extra-virgin olive oil
1 medium yellow onion, chopped
2 cloves garlic, minced
1 lb. ground beef
kosher salt
Freshly ground black pepper
1 tbsp. tomato paste
1 1/4 c. low sodium beef broth
1 (15-oz.) can tomato sauce
1 (15-oz.) can diced tomatoes
1 tsp. Italian seasoning
1 tsp. paprika
1 1/2 c. Elbow Macaroni, uncooked
1 c. shredded Cheddar
Chopped fresh parsley, for garnish
Directions
Heat the oil over medium heat in a large skillet. Add onion to it until they are slightly softened. This should take about 5 minutes.
Add garlic to the onion and cook it until it is no longer pink. This will take about 30 minutes. Drain the fat and return to pan.
Add tomato paste to the skillet and stir it in to coat everything. Pour in the broth, the tomato sauce along with the diced tomatoes.
Season everything with Italian seasoning along with paprika and stir in the macaroni. Bring everything to a simmer and cook. Stir everything occasionally until the pasta is tender. This will take about 15 minutes.
To round up, stir in the cheese and remove from heat. Garnish everything with parsley.
Crockpot Chicken Noodle Soup
Ingredients
1 1/2 lb. boneless skinless chicken breasts
10 c. low-sodium chicken broth
1 large onion, chopped
3 carrots, peeled and sliced into coins
2 stalks celery, sliced
3 cloves garlic, minced
2 sprigs fresh rosemary
1 bay leaf
kosher salt
Freshly ground black pepper
8 oz. pasta
Freshly chopped parsley, for garnish
Directions
Combine chicken, chicken broth, onions, carrots, celery, garlic, thyme, rosemary and bay leaf and season everything properly with salt and pepper.
Cover the skillet and cook on low heat. For 6 hours.
Remove the chicken from the slow cooker and shred it. Return to the slow cooker and pasta. Cook on low heat again until tender. Make it 20 to 30 minutes more.
Garnish with parsley and serve.
