Ingredients

 

1 box Devil’s food cake mix, plus ingredients called for on box

24 large marshmallows

1 c. butter, softened

2 1/2 c. powdered sugar

3/4 c. cocoa powder

2 tsp. pure vanilla extract

pinch of kosher salt

1/4 c. heavy cream

Directions

Start with preheating the oven up to about 3500. Line 12 cup cupcake pans with cupcake liners.

Prepare the Devil’s Food cake mix according to the package instructions. If you are planning to start from scratch you can follow the usual pancake batter recipe that you can easily find on the web. But we suggest that you go ahead with the Devil’s food cake mix since it will be super easy.

Fill each cupcake liner about two-thirds full with batter and bake the cupcakes until a toothpick inserted into each cupcake comes out clean. This will take about 20 minutes and you should let the cupcakes cool for about 10 minutes.

Scoop a small well in each cupcake using a teaspoon. Reserve the cupcake crumbs for garnish. Place a marshmallow into each well that you made by scooping each one of the cupcakes.

Bake the cupcakes again with the marshmallows in the wells of the cupcakes. This will take about 5 minutes.

Let the cupcakes cool for about 20 minutes in the room temperature.

Make the chocolate frosting

Beat butter, powdered sugar, cocoa power, vanilla and salt with a hand mixer in a large bow.

Beat in the heavy cream too. But make sure you add the cream by the tablespoon until the consistency is creamy but can hold peaks.

Pipe the frosting onto the cupcakes. Sprinkle the cupcake crumbs that you saved previously saved when scooping out the wells on top of the cupcakes and serve!
