Ingredients

For the Crust

 

Cooking spray, for pan

20 oreos

1/4 c. unsalted butter, melted

pinch of kosher salt

 

For the Cheesecake

 

16 oz. cream cheese, softened

3/4 c. powdered sugar

1 1/2 c. cold heavy cream

1 c. chocolate chips, melted and cooled

3/4 c. smooth peanut butter

 

For Ganache and Topping

 

1 1/2 c. semisweet chocolate chips

1 1/2 c. heavy cream

1/2 c. peanut butter, melted

2 c. chopped Reese’s

Instructions

Grease an 8” springform pan with cooking spray and line its bottom with parchment paper.

Make the crust:

Take the bowl of the food processor and pulse Oreos into fine crumbs.

Add butter and salt and pulse the mixture to combine well.

Put the mixture into the pan you prepared and refrigerate it while you prepare the filling.

Make the filling

Beat cream cheese in a large bowl using an electric mixer until it’s fluffy and light for 2 minutes.

Add sugar to combine and add cream gradually and beat the mixture on high speed until stiff peaks form.

Divide the cream cheese mixture into two bowls.

Fold in melted chocolate chips to one bowl and fold in the peanut butter to the other one.

Meanwhile heat heavy cream in a medium saucepan over medium heat.

Remove the pan from heat when the cream begins to simmer. Pour the cream over the chocolate chips.

Let it sit for 5 minutes and whisk it until it’s completely smooth.

Pour the ganache over the cake until it’s completely covered.

Pour over melted peanut butter in thick stripes.

Press the chopped Reese’s into the sides of the cake while the ganache and the peanut butter are still warm.

Refrigerate the cake for an hour before slicing the Reese’s Tiger Pie.
