Prep time: 0.30
2 tbsp. extra-virgin olive oil
1 medium yellow onion, chopped
2 lb. boneless skinless chicken breasts
3 cloves garlic, minced
1 tbsp. freshly grated ginger
1 tsp. paprika
1 tsp. turmeric
1 tsp. coriander
1/2 tsp. cumin
1 15-oz. can crushed tomatoes
1 1/2 c. chicken broth
1/2 c. heavy cream
Freshly ground black pepper
Chopped fresh cilantro, for garnish
Basmati rice, cooked, for serving
Naan, for serving
Heat the oil in a large pot over medium-high heat. Add onion and cook until soften and slightly golden up to 5 to 7 minutes.
Add the chicken and sear them in the oil until it’s golden on all sides for 5 minutes or more.
Stir in the garlic and ginger and cook until fragrant for 2 minutes or more.
Coat the aromatics in spices and cook the chicken until very fragrant for less than a minute or more.
Pour in the tomatoes and the chicken broth and start simmering the contents of the pot.
Stir in the heavy cream, then season with salt and pepper.
Simmer some more until the chicken pieces are cooked through and tender. This will take about 10 minutes.
Garnish the contents with cilantro and serve it over rice or with naan. Decorate the plate with some lemon wedges for added flavour.
