Pulled Pork Pickle Sliders

Ingredients
1 lb. BBQ pulled pork
1/2 tsp. brown sugar
1 tsp. yellow mustard
1 tsp. apple cider vinegar
1 green onion, thinly sliced
24 dill pickle chips
1 c. prepared coleslaw
Instructions
Warm prepared pulled pork according to package instructions in a large bowl. Add mustard, brown sugar, apple cider vinegar and green onions to the bowl and mix into the bowl until combined.
Place 12 pickle chips on a serving platter.
Top each pickle with coleslaw and pulled pork.
Top it with another pickle chip, insert toothpick and serve!
Pickle Sushi

Ingredients
2 oz. cream cheese, softened
3 tbsp. mayonnaise
1/4 tsp. garlic powder
Pinch of cayenne pepper
kosher salt
1/2 c. Cheddar, grated
1 jar whole pickles, sliced lengthwise
2 oz. salami, chopped
Grainy mustard, for dipping
Instructions
Mix together cream cheese and mayonnaise together in a small bowl. Season with garlic powder, cayenne and salt and then fold in cheddar.
Cover with plastic wrap and let it chill in the refridgerator for at least 15 minutes.
Spread about 1 teaspoon of the cheese and mayonnaise mixture on a pickle.
Add salami and roll up.
Repeat it with the remaining ingredients.
Serve with mustard as dipping.
Greek Salad Skewers
Ingredients
1 big block of feta (about 12-oz.), cut into cubes
1/4 c. extra-virgin olive oil
1 tbsp. lemon juice
1 clove garlic, smashed
1 tbsp. Chopped fresh dill
1 tbsp. chopped fresh parsley
Flaky sea salt
Freshly ground black pepper
12 pitted kalamata olives
12 cherry tomatoes
1 cucumber, cut into 12 large cubes
Instructions
Marinate feta: combine feta, olive oil, lemon juice, garlic, dill and parsley.
Season everything salt and pepper and toss until cheese is fully coated in the marinade. Let it sit for 15 minutes.
Assemble skewers by layering feta, olives, cherry tomatoes and cucumber onto the medium skewers.
