Ingredients

1 beaten egg

3 tablespoons of milk

1 cup of finely crushed saltine crackers (about 28 crackers)

1 teaspoon of dried thyme, crushed

½ teaspoon of paprika

1/8 teaspoon of black pepper

2 ½ -3 pounds of meaty chicken pieces (breasts/ thighs and drumsticks)

1 cup of milk

1 recipe Creamy Gravy

Directions

  1. combine the egg and the 3 tablespoons of milk in a small bowl. In another small bowl combine the crushed crackers, thyme, paprika and pepper.
  2. Dip the chicken pieces, 1 at a time firstly in the egg mixture and roll it in the cracker mixture afterwards.
  3. brown the chicken in hot oil over medium heat for 10 to 15 minutes in a large skillet. Turn the chicken pieces occasionally and drain them well in paper towels.
  4. Add the one cup of milk into the skillet and increase the heat until it boils. Reduce the heat to medium-low and cover the lid tightly and let it cook for 35 minutes.
  5. uncover and cook about 10 minutes more or until the chicken is no longer pink (1700 F for breasts; 180 0 F for thighs and drumsticks)
  6. transfer the chicken to a serving platter and reserve the drippings for the creamy gravy. Cover the chicken and keep warm.

Ingredients for Creamy Gravy

3 tablespoons of drippings in skillet

¾ cup of milk

3 tablespoons of all-purpose flour

¼ teaspoon salt

1/8 teaspoon of black pepper

1 cup of milk

 

Directions

  1. Skim fat from the drippings. Reserve 3 tablespoons of the drippings in the skillet.
  2. combine milk, all-purpose flour, salt, and black pepper in a screw-top jar. And cover and shake until well combined and add to the skillet.
  3. Stir in the leftover milk.
  4. Cook over medium heat, stirring constantly, until thickened and bubbly.
  5. Cook and stir for 1 minute more. (If desired, thin with additional milk).
  6. Makes about 1-3/4 cups.
