Let’s face it, there is nothing like making your own dessert at home and getting to taste it with your entire family. And we both know the usual ice-cream desserts you have on a daily basis cannot really shine a light on awesomely tasteful mouthwatering homemade desserts. Our latest find it Raspberry and Blueberry Cobbler!

We have been speaking about making your own delicious desserts at home, but personally, it think this is one of the best because, it’s raspberry and blueberry cobbler! And I think desserts cannot get any better than that!

Cooking time: 30 minutes

Ready in: 50 minutes.

Ingredients

Topping:

1 cup all-purpose flour

1/2 cup white sugar

1 teaspoon baking powder

1/4 teaspoon salt

6 tablespoons butter

1/4 cup boiling water

 

Filling:

2 tablespoons cornstarch

1/4 cup cold water

2 cups fresh blueberries

1 1/2 cups fresh raspberries

3/4 cup white sugar

1 tablespoon lemon juice

Instructions

Start with preheating your oven to 400 degree F (200 degrees C).

Line a baking sheet with an aluminium foil.

Mix flour, ½ cup of sugar, baking powder and salt in a bowl. Mash the butter into the flour mixture until the mixture is crumbly.

Stir the boiling water into the flour mixture to form a dough.

Dissolve the cornstarch in cold water in a separate bowl. Stir the blueberries, raspberries, ¾ cup of sugar and lemon juice into the cornstarch mixture.

Transfer this to a cast-iron skillet and bring the mixture to a boil stirring the mixture frequently.

Drop the dough that you prepared previously into the skillet by the spoonful.

Fill up the baking sheet with the mixture with the content of the mixture.

Bake in the preheated oven until the topping is golden brown. This will take about 25 minutes.

Once baked you can serve the cobbler with extra blueberries, raspberries and even strawberries.
