Who says cucumbers only taste good in a salad? We have spoken of many other interesting benefits of cucumbers before. But we have got here the best and probably the yummiest benefit of all – healthy snack recipes inspired from this delicious vegetable!
We came up with five healthy snack recipes that you can not only give away at an evening tea party as appetizers, but also as a type of healthy canapes!
1.The Cucumber Sandwich
Ingredients:
Cucumbers
Prosciutto
Cheese
We went the distance and called this a “sandwich”. This is a great idea if you are trying to complete shun the carbs. You can substitute the prosciutto with any other type of meat!
2. Cucumbers and Dip
Ingredients:
Cucumbers
Hummus
Wan to whip up something quick and extremely? This is your best bet! I personally prefer the garlic hummus but if you are not into that taste, any other dip you find delicious will do. Since we are looking for the “healthy” factor, better to avoid Nutella or peanut butter.
3. The Green Roll
Ingredients:
Cucumbers
Mashed avocado with cilantro
Capers
The trick here is to slice up a cucumber thin enough so that it would roll up easily. Fill up the roll with a generous amount of avocado so the roll stays put. We just LOVE this one because there is something cooling about a thick blob of avocado sitting in your stomach! Add up some capers because you serve for the “fancy factor”.
4. The Tuna Cracker
Ingredients
Cucumbers
Cajun pepper
Tuna
Crackers
This was our favourite. We added a bit of lime and salt to the tuna for flavour. The crackers added a crunchy kick we could just die for. If you are into chicken better, boil some and shred them. The Cajun pepper added an incredible flavour to the snack.
5. Cucumber and Sun-dried Tomato Snack
Ingredients:
Cucumbers
Sun-dried tomatoes
Cheese
This is a really pretty snack for a wine tasting. If you want to go all healthy and guilt-free, substitute the sun-dried tomatoes with garden tomatoes.
