 Ingredients

2 tbsp. extra virgin olive oil

4 boneless pork chops

Kosher salt

Freshly ground black pepper

2 peaches, thinly sliced

1 medium red onion, thinly sliced

¼ tsp. crushed red pepper flakes

3 sprigs fresh thyme

½ c. chicken broth

2 tbsp. brown sugar

Cooked white rice for serving

Freshly chopped parsley, for  garnish

Directions

Season the both sides of the pork chops with salt and pepper.

Start with heating oil in a large skillet over medium-high heat. Sear the pork chops until golden about 2 minutes per side.

Add the seared pork chops to the crock pot along with peaches, onions, more salt and pepper and red pepper flakes.

Add thyme, chicken broth and the apple cider vinegar along with brown sugar. Stir to coat the ingredients around the pork chops.

Cook on low heat until the pork chops are tender and peaches and onion are soft. This will take about 2 hours.

Once you have hit the 2 hours on the clock. Switch off the hearth and keep the pot on the hearth so the leftover heat would keep the pork chops cooking under even lower heat even further. But if you are planning to serve the contents all at once, this is going to be a moot point.

Remove the thyme first and serve over rice, garnished with fresh parsley.
