Ingredients

 

1 tbsp. olive oil

1 red onion, finely chopped

1 Green Bell Pepper, chopped

1 1/2 lb. ground turkey

2 cloves garlic, minced

2 tbsp. tomato paste

kosher salt

Freshly ground black pepper

1 28-oz can chopped tomatoes

1 can black beans, rinsed and drained

1 can kidney beans, rinsed and drained

1 1/2 c. low-sodium chicken broth,

2 tsp. chili powder

1 tsp. ground cumin

1 tsp. dried oregano

Shredded cheddar cheese, for garnish

sliced green onion, for garnish

Directions

Heat olive oil in a large skillet over medium high heat. Add onion and pepper and cook everything until they are tender. This will take about 4 minutes.

Add the ground turkey and cook and stir everything occasionally until the turkey is golden and cooked through.

Season the contents with salt and pepper and then stir in the garlic and the tomato paste and cook the contents until they are fragrant. This will take about 2 minutes.

Add the black beans, kidney beans, chicken broth, chili powder cumin and oregano to the slow cooker that you have going on next to your main hearth.

Cook these contents on high heat. This will take about four hours until the chili has thickened.

Check for seasoning and season everything with salt and pepper to taste.

Garnish with cheese and green onion to enhance the taste.
