Ingredients

 

2 tbsp. unsalted butter

2 tbsp. vegetable oil

1/4 c. all-purpose flour

1 small yellow onion

1 medium green bell pepper, chopped

2 celery ribs, chopped

2 cloves garlic, minced

12 oz. andouille sausage, sliced into 1/2″ pieces

1 tbsp. cajun seasoning (without salt)

kosher salt

Freshly ground black pepper

1 bay leaf

1 15-oz. can fire-roasted diced tomatoes

1 32-oz. box chicken broth

1 lb. shrimp, peeled and deveined

3 green onions, chopped

cooked white rice, for serving

Directions

Melt butter add oil and flour in a large deep skillet over medium-low heat.

Cook the ingredients stirring them constantly until they turn into dark caramel colour. This will take about 10 minutes.

Start to add the rest of the ingredients such as onions, pepper and celery. Stir them until they are softened. This will take about 5 minutes.

Stir in the garlic and sausage. Season the contents with the Cajun seasoning, salt and pepper. Stir in bay leaf, diced tomatoes and chicken broth. Bring everything to a boil.

Reduce the heat to low and simmer it until the contents are thickened.

Stir occasionally for an hour.

Add the shrimp during the last 10 minutes of cooking.

Once you see shrimp getting a pink shade and cooked through, taste the ingredients and add salt or pepper seasonings.

Stir in the green onions and reserve some for the garnish

Spoon it on top of the cooked white rice and serve hot.
