Ever loved snickerdoodles your mom used to make when you were small on a cosy weekend. This is a much better version of snickerdoodles. These snickerdoodles ice cream sandwiches is a dessert to die for!

Although the summer is gone and ice cream cannot actually do us any good, the snickerdoodle ice cream sandwiches won’t ruin your fall weekend!

Serves: 8-10 persons

 

Ingredients

 

1 1/2 Sticks unsalted butter, softened

1 1/4 c. plus 1 tbsp. sugar, divided

3 large eggs

2 tsp. pure vanilla extract

2 c. all-purpose flour

1 tsp. kosher salt

1/2 tsp. baking soda

1 1/2 tsp. cinnamon, divided

1 gal. vanilla ice cream, softened slightly

Directions

Start with preheating your oven to 3500 . line a large rimmed baking container with parchment paper.

Beat the butter along with 1 ¼ cups of sugar until fluffy in a large bowl with the use of a hand mixer.

Add eggs and vanilla and beat the contents until everything is combined.

Combine flour, salt and baking soda along with one teaspoon cinnamon in a separate medium bowl. Whisk again with the hand mixer to combine.

Pour the dry ingredients into the wet ingredients in the other bowl and stir everything until they are incorporated.

Spread the batter onto the prepared baking sheet and sprinkle the remaining cinnamon and sugar on top of the batter.

Bake the batter until it is set. This will take about 15 to 18 minutes.

Let the pan cool in completely. Cut the baked cake in half (horizontally) crosswise to make two large rectangles.

Spread vanilla ice cream onto one half. Make this a considerable amount since the snickerdoodle ice cream sandwiches quite thick.

Freeze the ice cream until it is firm . this will take about 2 hours.

Slice the snickerdoodles into squares and serve immediately.

If you are planning to save these for later we suggest that you store everything sandwich in an airtight container and store in deep freeze.

S’mores Cheesecake

Ingredients

For the ganache

 

1 1/2 c. chocolate chips

3/4 c. heavy cream

 

For the crust

 

1 sleeve graham crackers, crushed

5 tbsp. melted butter

1/4 c. sugar

Pinch of kosher salt

1 sleeve of graham crackers, separated into sticks

 

For the cheesecake

 

16 oz. (2 blocks) cream cheese, softened

3/4 c. powdered sugar

1 1/2 c. cold heavy cream

1 tsp. pure vanilla extract

1/4 tsp. kosher salt

mini marshmallows

S’mores Cheesecake

Instructions

Make Ganache; Place the chocolate chips in a medium, heatproof bowl and set it aside.

Heat the heavy cram in a small saucepan over medium heat.

When the cream starts to bubble and the bubbles begin to pop around the edges of the pan, turn off the heat.

Pour the hot heavy cream on the chocolate chips while whisking mixture constantly until the sauce is smooth. Let the sauce cool slightly.

Make the Crust

Mix the graham cracker crumbs, melted butter, sugar and salt in a large bowl.

Grease an 8” spring form pan with cooking spray and press mixture into the pan.

Pour about half of the ganache over the crust and line the graham cracker sticks around the edges of the pan standing up straight to form a wall around the mixture.

Making the Cheesecake

Beat the cream cheese until light and fluffy for 2 minutes with an electric mixer in a large bowl.

Add sugar to the mixture and gradually add cream and beat on high speed until the stiff peaks form.

Add vanilla and stir until the ingredients are combined well.

Pour the cheesecake mixture over the ganache and smoothen the top with a spatula. Pour the remaining ganache over the cheesecake and top it with marshmallows.

Freeze for at least 5 hours and up to overnight.

Broil the S’mores Cheesecake before serving for about 2 minutes.

So, grab your bowls and stirrers as this is going to be very delicious!

Ingredients:

For the Cookies:

  1. 1/2 cup organic non-hydrogenated all vegetable shortening
  2. 1/2 cup dark brown sugar
  3. 1 teaspoon vanilla extract
  4. 1/2 cup all-purpose flour
  5. 1/4 cup whole-wheat flour
  6. 1/4 cup organic cocoa powder
  7. 1/2 teaspoon baking powder
  8. 1/8 teaspoon salt

For the Filling:

  1. 2 tablespoons organic all vegetable shortening
  2. 1/2 cup plus 1 tablespoon powdered sugar
  3. 1 teaspoon unsweetened vanilla almond milk
  4. 1 teaspoon vanilla extract

For Assembling:

  1. 1/4 cup melted vegan caramel
  2. 12 mini sandwich cookies
  3. 2 mini breadsticks

 

Method:

#1: Preheat your oven to 350°F.

#2: Add shortening, brown sugar, and vanilla in a bowl and mix it well.

#3: In a separate bowl, sift together the flours, cocoa powder, baking powder, and salt.

#4: Add the dry ingredients to the creamed shortening and brown sugar mixture and mix on low until the dough comes together.

#5: Now, wrap the dough in a plastic wrap and refrigerate it for 20 minutes.

#6: After the said time, roll the dough and make a thin sheet of ¼” thickness.

#7: Cut the shapes of Fidget spinner from the sheet by placing spinner template.

#8: Transfer the cut shapes to the baking tray using a spatula and chill it for 10 to 15 minutes until the dough is firm to touch.

#9: After the said time, bake the spinners for 25 minutes and allow them to cool completely.

#10: While the cookies are baking, you can make the filling by mixing all the filling ingredients.

#11: Cut the breadsticks into 4 (1-inch) pieces.

#12: Separate the mini sandwich cookies and scrape off the cream filling.

#13: Assemble the cookies and filling with the help of melted caramel in the shape of Fidget Spinner.

Now you are done! Spin, spin and spin away.

We came up with five healthy snack recipes that you can not only give away at an evening tea party as appetizers, but also as a type of healthy canapes!

1.The Cucumber Sandwich

Cheese

We went the distance and called this a “sandwich”. This is a great idea if you are trying to complete shun the carbs. You can substitute the prosciutto with any other type of meat!

Ingredients:

Cucumbers

Hummus

Wan to whip up something quick and extremely? This is your best bet! I personally prefer the garlic hummus but if you are not into that taste, any other dip you find delicious will do. Since we are looking for the “healthy” factor, better to avoid Nutella or peanut butter.

3. The Green Roll

Ingredients:

Cucumbers

Mashed avocado with cilantro

Capers

The trick here is to slice up a cucumber thin enough so that it would roll up easily. Fill up the roll with a generous amount of avocado so the roll stays put. We just LOVE this one because there is something cooling about a thick blob of avocado sitting in your stomach! Add up some capers because you serve for the “fancy factor”.

4. The Tuna Cracker

This was our favourite. We added a bit of lime and salt to the tuna for flavour. The crackers added a crunchy kick we could just die for. If you are into chicken better, boil some and shred them. The Cajun pepper added an incredible flavour to the snack.

5. Cucumber and Sun-dried Tomato Snack

Cheese

This is a really pretty snack for a wine tasting. If you want to go all healthy and guilt-free, substitute the sun-dried tomatoes with garden tomatoes.

Let’s gather the ingredients

Potato

Butter

Garlic Powder

Hot sauce

Pepper

And Get Started!

Preheat the oven so that you can keep one of the waffles warm until you are ready serve. Use the smallest shred to shred only half a potato. This will make the waffle extra crispy. Put the shredded potato on a kitchen towel or even a paper towel – the former works better and squeeze the excess moisture.

Warm up the butter until it melts and mix up the garlic powder, salt and pepper to the mix. Pour in the hot sauce.

Put in the mixture in to the waffle iron. If you like the hash browns tender on the inside and crispy on the outside keep it in until 8 minutes.

For Extra Flavour

Grate some cheese on to the waffles and throw them back in the oven with the broiler on just so it would melt real fast.

Meanwhile, fry some eggs in olive oil until Crispy!!!!

Eating Part

Of course the rest is obvious. You can simply place the eggs on the waffles and add some more hot sauce on to it –this is exclusively for the extra spice lovers, since we made the waffles with the hot sauce in the first place—if you are in the mood for something Italian, I’d say go for pesto!
