Greek Potato Wedges
Ingredients
3 large russet potatoes
1/4 c. extra-virgin olive oil
2 tsp. garlic powder
1 tsp. dried oregano
kosher salt
Freshly ground black pepper
1/2 c. Greek yogurt
Juice of 1/2 lemon
2 tbsp. chopped fresh parsley, divided
pinch of crushed red pepper flakes
1/2 c. crumbled feta
1/4 c. Chopped fresh dill
1/2 c. Kalamata olives, coarsely chopped
1/2 c. chopped cucumber
1/2 c. halved cherry tomatoes
Directions
Preheat the oven to 3750 . Cut the potatoes into wedges and place them on the baking sheet. Drizzle the wedges with olive oil and sprinkle with garlic powder and oregano.
Season with salt and pepper and toss them until fully coated.
Arrange wedges in a single layer with the skin side down. Bake until deeply golden and crispy. This should take about 40 minutes.
Make the dip in the meantime. Combine Greek yogurt, lemon juice, 1 tablespoon of parsley and red pepper flakes in a small bowl. Whisk everything to combine.
Top the baked potato wedges with feta, tomatoes, dill and the remaining olives and cucumber.
Parmesan Tomato Chips
Ingredients
cooking spray, for cooling rack
15 assorted tomatoes, sliced 1/3″ thick
2 tbsp. extra-virgin olive oil
kosher salt
Freshly ground black pepper
2 tbsp. Italian seasoning
1/2 c. freshly grated Parmesan
Directions
Preheat the oven to 2750 and grease a cooling rack with cooking spray. Place it on top of a large baking sheet.
Arrange tomatoes on a large paper towel-lined plate. Cover with another paper towel and press out the juices.
Place the tomatoes on a cooling rack and lightly drizzle with olive oil. Season generously with salt, pepper and Italian seasoning.
Bake the prepared tomatoes checking them every 30 minutes. Bake until the tomatoes are completely dried out and beginning to become crispy. This should take about 3 hours.
Remove the tomatoes from the oven and heat broiler. Sprinkle tomatoes with Parmesan, then broil on low until cheese is melty. This would take about 1 to 2 minutes.
Let it cool and remove them from the cooling rack. Garnish with additional salt, pepper and Italian seasoning if you like!
